Ingredients We’re Growing in Our Garden and How We’ll Use Them This Wedding Season

At Big Delicious Planet, we believe that the best celebrations are marked by exceptional food, especially when it’s fresh, locally sourced, and prepared with love. Food has a way of bringing people together, creating memories, and making moments even more special. That's why we have an urban garden! Our urban garden is more than just a source of ingredients; it’s also about our commitment to sustainability, quality, and farm-to-table dining experiences.

Each year, we harvest thousands of pounds of produce, so that our dishes are packed with the freshest flavors of the season. In 2022 alone, we harvested over 6,800 pounds of produce! From watermelon radishes to a variety of 15 different tomatoes, our garden is always growing something! This wedding season, we’re excited to bring our farm-to-table philosophy to your special day, by using ingredients from our urban farm and highlighting those farm-fresh flavors.

Here’s a glimpse of what’s growing in our garden and how we’re incorporating these fresh ingredients into our menu:


Cucumbers

Fresh cucumbers from our garden are the star ingredient in our Pepper Ceviche Cucumber Cups. For these light, refreshing appetizers, we use crisp cucumbers to create a vessel for a mix of peppers to create a ceviche that’s both zesty and satisfying. Topped with BDP peppers (also from our garden), marcona almonds and a zesty sherry vinaigrette these cups are not only delicious but also a visual delight.

Heirloom Tomatoes

Our garden’s heirloom tomatoes are bursting with flavor and color. This season, you’ll find them featured in our Heirloom Tomato Panzanella Salad—the perfect summer dish! Our Heirloom Tomato Panzanella Salad is a beautiful blend of the freshest tomatoes straight from our urban farm. Each bite offers a burst of flavor, complemented by torn bread, crunchy cucumbers and a medley of farm-fresh veggies. This rustic Italian salad is perfect for adding a touch of summer to your wedding feast.

Swiss Chard

We’re using our Swiss chard as a key ingredient in our Swiss Chard Maki, a unique vegan twist on traditional sushi, utilizing the leafy goodness of Swiss chard as the wrap. Inside, you’ll find a colorful array of farm-fresh vegetables, offering a crunchy, nutritious bite that’s as delightful as it is healthy. These maki rolls are a testament to our innovative approach to farm-to-table cuisine.
